I am really enjoying my new Vegan Express cookbook, by Nava Atlas. Probably our favorites are the Thai Coconut Corn Soup or the Bok Choy, Edamame, Cashew, and Orange Rice. But I have loved every recipe I've tried - and so has my Montana, meat-eatin' husband. So I know it's good.

this is really yummy, but REALLY hard to make correctly. i've made it twice and the first time it looked and tasted absolutely terrible. :( but the second time i made it, it was absolutely amazing. give it a try if you're up for a challenge.
